Caciocavallo translates to ‘horse cheese’ or ‘cheese on horseback’. Its name derives from the Italian tradition of tying two cheese forms together and left to straddle over a wooden board to dry age.
This aged mozzarella is made from cow milk and hand-stretched into a natural tear drop shape to be hung to age. After aging, this cheese is naturally beechwood smoked, taking on a well balanced salty and smoky flavour.
Smoked caciocavallo is delicious grilled for antipasto.
