Squacquerone is a soft cheese, made from cow's milk and has a very short maturation time. It is a fresh, wobbly rindless cheese with tangy notes. Similar to crescenza and stracchino, Squacquerone DOP has its origins in the Emilia Romagna region. The name squacquerone derivates from “squacquerato” which in some dialects means 'almost liquid,' because of its high volume of water.
In Emilia Romagna, the most common way to eat Squacquerone is inside a piadina (a flatbread that you can stuff with your favourite ingredients) but of course, that is not the only way. There are different dishes you can include Squacquerone in: pizza, focaccia, toast, cannelloni and even desserts.

SQUACQUERONE, STRAWBERRIES AND BALSAMIC GLAZE
Ingredients:
1 Slice pane di casa
Extra-virgin olive oil
2 tbsp That's amore cheese Squacquerone
3 strawberries, sliced
Mint, roughly torn
1 tsp balsamic glaze
Method:
Toast pane di casa with olive oil until crunchy and golden. Spread squacquerone on toast. Top with sliced strawberry. Sprinkle mint leaves and drizzle with balsamic glaze.
SQUACQUERONE WITH SAN DANIELE, FIGS AND HONEY
Ingredients:
1 slice pane di casa
Extra-virgin olive oil
2 tbsp That's Amore Cheese Squacquerone
1 fig, sliced
3 slices San Daniele prosciutto
1 tsp honey
Method:
Toast pane di casa with olive oil until crunchy and golden. Spread squacquerone on toast. Top with prosciutto and sliced figs. Finish with a drizzle of honey.
SQUACQUERONE WITH SMOCKED SALMON, CUCUMBER AND DILL
Ingredients:
1 slice pane di casa
Extra-virgin olive oil
2 tbsp That's Amore Cheese Squacquerone
1/2 cucumber, sliced into rounds
3 slices smoked salmon
Dill
1/2 lemon
Method:
Toast pane di casa with olive oil until crunchy and golden. Spread squacquerone on toast. Top with smoked salmon and cucumber rounds. Sprinkle dill on top and drizzle with lemon juice.
