Burrata and Green Goddess Salad

A vibrant salad featuring creamy burrata, fresh greens, and a tangy green goddess dressing, offering a light and flavorful dish.

Ingredients

Mixed Leaf and herb salad

made from some or all of the following

  • nasturtium leaves
  • baby rocket
  • mizuna
  • red vain sorrel
  • spinach
  • baby lettuce
  • lovage
  • baby basil

Green dressing

  • 2 spring onions, finely sliced
  • ½ garlic clove, finely grated
  • 4 anchovy fillets, finely chopped
  • 2 cornichons, finely sliced
  • ½ jalapeno, seeds removed and finely diced
  • ½ tsp baby capers
  • 2 green olives, cheeks finely diced
  • 1 tbsp chives, finely chopped
  • ½  lemon juice and zest, finey grated
  • 1 tsp Dijon mustard
  • ¼ tsp chilli flakes
  • ¼ tsp salt flakes
  • ¼ tsp cracked black peppercorn

Assembly

  • 125 g burrata, room temperature

Instructions

Step 1

Start by making the dressing adding all the ingredients into a bowl and mix well. Arrange the salad and leaves on a plate and place the burrata in the centre. Spoon over the dressing and serve immediately.
