These Grilled Peaches with Whipped Mascarpone are a delightful blend of smoky sweetness and creamy richness. Juicy, caramelised peaches pair beautifully with light, airy mascarpone, creating a simple yet elegant dessert perfect for summer gatherings or a sweet finish to any meal. 8 yellow peaches sliced in half and pit removed
2 x 250g That’s Amore Cheese Mascarpone
1 cup Greek yoghurt
1 tsp vanilla paste
½ cup runny honey + extra for serving
Fresh thyme leaves for garnish
100g Amaretti Cookies, roughly crushed
Extra virgin olive oil for brushing
Step 1
Preheat your grill for 10 minutes on medium to high heat.
Step 2
Add mascarpone cream to a bowl along with the Greek yoghurt, vanilla paste and honey and slowly whip to incorporate. Divide the mascarpone cream onto the base of 8 serving bowls.
Step 3
Wash and dry the peaches. Carefully run a knife around the centre of the peach to cut in half and twist each half to separate them. Remove the pit using a spoon to scoop out the pit.
Step 4
Brush each cut side of peach with a little extra virgin olive oil. Place cut side down on the grill for 8-10 minutes, or until grill marks form and little bubbles begin to appear at the edges of the fruit. Carefully remove peaches from grill and place cut side up onto a serving platter.
Step 5
Place two grilled peaches, cut side facing up on top of the whipped mascarpone cream.
Step 6
Drizzle with extra honey and roughly crumble the amaretti cookies over the top of each serving. Garnish with fresh thyme leaves.
