March 04 2024 – That's Amore Cheese
Ingredients
8 yellow peaches sliced in half and pit removed
2 x 250g That’s Amore Cheese Mascarpone
1 cup Greek yoghurt
1 tsp vanilla paste
½ cup runny honey + extra for serving
Fresh thyme leaves for garnish
100g Amaretti Cookies, roughly crushed
Extra virgin olive oil for brushing
Method
Preheat your grill for 10 minutes on medium to high heat.
Add mascarpone cream to a bowl along with the Greek yoghurt, vanilla paste and honey and slowly whip to incorporate. Divide the mascarpone cream onto the base of 8 serving bowls.
Wash and dry the peaches. Carefully run a knife around the centre of the peach to cut in half and twist each half to separate them. Remove the pit using a spoon to scoop out the pit.
Brush each cut side of peach with a little extra virgin olive oil. Place cut side down on the grill for 8-10 minutes, or until grill marks form and little bubbles begin to appear at the edges of the fruit. Carefully remove peaches from grill and place cut side up onto a serving platter.
Place two grilled peaches, cut side facing up on top of the whipped mascarpone cream.
Drizzle with extra honey and roughly crumble the amaretti cookies over the top of each serving. Garnish with fresh thyme leaves.
Serve immediately.
