  1. Pour milk into a medium saucepan.

  2. Gently whisk in gelatin over medium heat for 3 mins.

  3. Reduce heat to allow the gelatin to soften.

  4. Add honey, maple syrup and vanilla.

  5. Cook over medium heat, stirring constantly, until milk is hot enough to steam. Do not boil.

  6. Lightly grease small moulds with coconut oil and pour in heated mixture.

  7. Cover and place in the refrigerator for 5-6 hours or overnight.

  8. When ready to serve gently turn out onto serving dishes and serve with warm grilled figs.
