    Preheat oven to 180°

    Wash broccolini and chop off bottom part of the stem, around three quarters of the way down. Pour half a cup of water into a small saucepan over low heat, add in broccolini and place a lid over saucepan slightly open and leave to cook for a couple of mins. Once ready, drain and dress with lemon, olive oil, salt and pepper.⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

    Slice burger buns in half and bake them in the oven for a couple mins face side down to get a bit of colour and crunch.⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

    While buns are toasting, slice the smoked caciotta in half lengthways, creating two thin round cheese patties and brush each side of the cheese with olive oil. Place a fry pan over medium heat and when hot, place the caciotta and sear it for a couple of mins or until the cheese has a nice crust at the bottom, then flip it and do the same on the other side. ⠀⠀⠀⠀⠀

    Once the caciotta is slightly melted in the middle, remove it gently from the heat and set aside. ⠀⠀⠀⠀⠀⠀⠀⠀

    Spread the pesto evenly across the bottom slice of each bun, add the caciotta, followed by the broccolini and finish with roasted capsicum.
