Smoked provolina filled with olive and chilli
Diavoletti means ‘little devils’. This cow milk cheese has a centre of green olive filled with fiery red chilli, and is a little known style of cheese from Naples. The stuffed olive is inserted into the stretched curd before it is tied in a knot at the top, giving its characteristic shape. Delicately smoked to add a real kick to the chilli spice!
