Fior di Latte is a fresh Italian cheese made from cow’s milk, known for its delicate flavor and soft, elastic texture. It is crafted using the pasta filata method, where fresh milk is curdled with rennet, then the curds are heated and stretched until they become smooth and pliable. The cheese is then shaped into round balls or other forms and placed in a light brine to enhance its flavor and maintain moisture. Unlike Burrata or Stracciatella, Fior di Latte has a firmer, more uniform consistency, similar to traditional Mozzarella but with a slightly more pronounced milky taste. It is commonly used in dishes like Caprese salad and Neapolitan pizza, where its fresh, mild flavor and excellent melting qualities shine.
