A refreshing twist on the classic, our Caesar Salad with Buffalotto combines crisp romaine lettuce, creamy Caesar dressing, and crunchy croutons, topped with tangy, smoky Buffalotto cheese. This rich, bold addition elevates the dish, adding a creamy texture and a burst of flavour that complements the salad’s traditional elements perfectly.

Ingredients

½ cup That’s Amore Buffalotto Cheese, grated

1 egg yolk

1 garlic clove, minced

5 anchovy fillets, minced

1 tsp Dijon mustard

½ cup extra virgin olive oil

Juice of half a lemon

Salt and pepper to taste

1 head of cos or romaine lettuce

2 cups croutons, toasted or

4 rashes of bacon, fried and diced

½ cup That’s Amore Buffalotto, shaved and grated

Instructions

Step 1

In a bowl, whisk together the egg yolk, minced garlic, minced anchovy fillets, lemon juice, grated cheese and Dijon mustard until well combined. Gradually add the olive oil while continuously whisking to create an emulsion. Season with salt and pepper to taste, mix well and set aside.

Step 2

To assemble: On a large plate, add the washed and torn lettuce leaves. Add the toasted croutons and diced bacon. Pour the prepared dressing over the lettuce and toss well to coat all the leaves evenly.

Step 3

Add the shaved and grated Buffalotto cheese all over the salad. Serve immediately.
