A melty three-cheese toastie with spring onions, complemented by a spicy kick of harissa for a flavorful twist.
Step 1
Spread half of harissa onto two slices of bread.
Step 2
Arrange 40g of smoked scamorza slices onto harissa side of each slice of bread.
Step 3
Mix grated Nabucco and shredded mozzarella together in a bowl and season with white pepper. Arrange half of cheese mix onto each piece of bread.
Step 4
Add spring onions (20g per sandwich) on top of cheese mix.
Step 5
Add remaining scamorza slices on top of spring onions (40g per sandwich) and top with remaining slices of bread to form sandwich.
Step 6
Mix lemon zest and softened butter in a bowl. Spread half of lemon butter onto top of sandwiches. Place a piece of silicone paper onto butter side of each sandwich and gently press down. Carefully flip sandwiches and butter the top of each sandwich with remaining lemon butter.
Step 7
Preheat sandwich toaster. Toast sandwiches until inside of sandwich is hot and cheese has completely melted.
Step 8
Remove from toaster and rub exterior crust with garlic clove. Add salt and fresh thyme leaves and leave to sit for 45-60 seconds before cutting. Serve immediately.
