Combining arguably two of the best desserts around: Tiramisu and Brownies. Layers of rich mocha brownies, coffee spiked mascarpone topped with a dusting of cocoa.
For the Brownie
120g unsalted butter, melted
1 cup white sugar
2 eggs
50ml espresso coffee brewed
1/3 cup cocoa powder
1/2 cup all-purpose flour
1/4 tsp baking powder
For the Mascarpone
225g mascarpone cheese
4 tbsp espresso
1 tbsp cocoa powder for dusting
Step 1
Add the mascarpone and coffee to a bowl, whisk until thick and set aside.
Step 2
Preheat the Oven to 175c/350°f and line an 8x8-inch (20x20cm) baking pan with parchment paper.
Step 3
In a bowl, whisk together melted butter and sugar until combined. Whisk in the eggs, cocoa powder, flour, espresso and baking powder and stir until combined.
Step 4
Pour into the baking pan and place into the oven to bake for 25-30 minutes, until the edges are set. Cool completely before slicing into 9 pieces.
Step 5
To assemble, place a brownie on a plate and spoon a little of the mascarpone mixture. Add another brownie on top. Top with more mascarpone mixture and dust with cocoa powder.
