Tomato & Burrata Croissant

Simple yet irresistible Tomato and Burrata Croissant. A flaky buttery croissant, served with roasted cherry tomatoes, our Burrata and a drizzle of extra virgin olive oil, salt, pepper and fresh basil. Easy!

Ingredients

10 cherry tomatoes on the vine

olive oil

1 croissant, cut lengthwise and toasted

1 × 90 g (3 oz) burrata

black pepper

5 basil leaves

Instructions

Step 1

Preheat the oven to 200ºC (390˚F).

Step 2

Drizzle the tomatoes with olive oil and sprinkle with salt.

Step 3

Roast the cherry tomatoes in the oven or 20 minutes, or until they start to blister.

Step 4

TO SERVE: Gently lay the tomatoes and croissant on a plate. Add the burrata on top of the croissant, season with salt and black pepper to taste, then scatter with basil leaves.
