An exceptionally rich flourless chocolate cake with complex flavour profile of dark chocolate and orange zest, topped with creamy Baby Burrata for added indulgence.
2 x 125g Baby Burrata
200g dark chocolate, roughly chopped
150g unsalted butter, cubed
150g sugar
3 eggs
200g almond flour
1 tsp vanilla extract
Zest of 1 orange
Powdered sugar for dusting
Step 1
Preheat oven to 170°C (340°F). Grease and line a 20cm (8-inch) round cake pan.
Step 2
Melt chocolate & butter together over a double boiler or in the microwave in short bursts, stirring until smooth. Let cool slightly.
Step 3
Whisk eggs & sugar in a bowl until pale and slightly fluffy. Add vanilla and orange zest. Fold in melted chocolate gently, then stir in almond flour until just combined.
Step 4
Bake for 25-30 minutes until the edges are set but the centre is slightly soft. Cool completely and dust with powdered sugar.
Step 5
Add with baby burrata on top and serve immediately.
