Buffalo mozzarella is a fresh Italian cheese made from the milk of water buffalo, traditionally in the Campania region of Italy. We source our buffalo milk from central Victoria. It is crafted using the pasta filata method, where buffalo milk is curdled with rennet, and the curds are heated and stretched until they become smooth and elastic. The cheese is then shaped into balls and stored in brine to maintain its moisture and enhance its flavor. Compared to cow’s milk mozzarella (Fior di Latte), buffalo mozzarella has a richer, creamier texture and a slightly tangy, more pronounced flavor due to the higher fat content of buffalo milk. It is highly prized for its delicate yet complex taste and is commonly used in Caprese salads, gourmet pizzas, and traditional Italian dishes where its fresh, milky flavor can shine.
