Being a washed rind cheese, it has an edible rind, soft and tinged with orange hues, a result of careful washing during the maturation process. The cheese itself features a compact paste with minimal to no eyes, exhibiting varying degrees of softness from the outer layer to the inner core. With a distinct yellowish hue and a fragrant aroma, Lavato offers a mild yet intricate flavor profile, characterized by initial delicacy and culminating in a lingering mushroom aftertaste. Its soft texture ensures a pleasant experience on the palate.
