A flavorful veggie patty made with caciotta cheese, served in a bun with fresh veggies for a satisfying, vegetarian twist on the classic burger.
1 That’s Amore Smoked Caciotta
1 broccolini bunch
2 burger buns
100g pesto
100g roast capsicum
Step 1
Preheat oven to 180°
Step 2
Wash broccolini and chop off bottom part of the stem, around three quarters of the way down. Pour half a cup of water into a small saucepan over low heat, add in broccolini and place a lid over saucepan slightly open and leave to cook for a couple of mins. Once ready, drain and dress with lemon, olive oil, salt and pepper.⠀⠀⠀

Slice burger buns in half and bake them in the oven for a couple mins face side down to get a bit of colour and crunch.
Step 4
While buns are toasting, slice the smoked caciotta in half lengthways, creating two thin round cheese patties and brush each side of the cheese with olive oil. Place a fry pan over medium heat and when hot, place the caciotta and sear it for a couple of mins or until the cheese has a nice crust at the bottom, then flip it and do the same on the other side.

Once the caciotta is slightly melted in the middle, remove it gently from the heat and set aside.
Step 6
Spread the pesto evenly across the bottom slice of each bun, add the caciotta, followed by the broccolini and finish with roasted capsicum.
