Isolation Blue is a blue vein cheese, is name comes from the period where this cheese was ultimate created and perfectioned, late 2020, during the pick of the pandemic and therefore, the Isolation period we all clearly remember.
Isolation Blue is characterised by blue and greenish veins or spots of mould throughout the body, the characteristic veins are created during the maturation phase of this cheese when is spiked with specific stainless-steel rods to let oxygen flaw throughout the cheese encouraging the formation of the mould, softening the texture and provide the cheese with the distinctive “blue flavour”.


Isolation Blue has a distinctive salty and bitter aftertaste, its smell is peculiarly sharp but mild compared to blue cheese such as Gorgonzola, Roquefort, and Stilton, semi hard and almost crumbly in texture, depending on how matured or old this cheese can be.

Food pairings:
Isolation Blue can be melted to obtained sauces and creams – perfect for cooking into risotto, pasta, and creamy dishes, is also well establish for use on its own, such as cheese platter presentation paired with bread, crackers, dry fruit and honey.
