Semi matured cow milk 'eye cheese' with black truffles
Named after the classic Italian cake due to the rise in this cow's milk cheese that occurs during maturation. The rise is created by the pockets of air (eyes) that develop during fermentation. Mildly sweet and nutty in flavour with an earthy, mushroom flavour from the addition of black truffles.
