Squacquerone is a soft, creamy Italian cheese made from cow’s milk, similar to Stracchino. it is known for its mild flavor and smooth, spreadable texture. It originates from northern Italy, particularly Lombardy, Piedmont, and Liguria. The cheese is made by curdling fresh milk with rennet, then allowing it to ferment for a short period, resulting in a soft, slightly tangy cheese with a high moisture content. Unlike aged cheeses, Stracchino-style is eaten fresh, giving it a delicate, buttery taste with a hint of acidity. Its name comes from the Italian word stracco, meaning "tired," as it was traditionally made from the milk of cows returning from seasonal alpine grazing. Our Squacquerone is often enjoyed spread on bread, melted into focaccia, or used in creamy pasta dishes.
