Ingredients
- 1 tbsp extra virgin olive oil plus extra for brushing
- 2 x That's Amore Cheese Buffalo Mozzarella, cut into 8 rounds
- 8 anchovies
- 8 lemon leaves, large
- Lemon zest
- Pepper
Instructions
Heat a grill pan or BBQ over a medium-high heat.
Wash and dry lemon leaves then brush both sides with oil. Arrange each mozzarella portion onto the leaves.
Place on grill (may have to do this in batches), leaf side down and cook for 2-3 minutes or until leaves begin to char and mozzarella melts.
Arrange on a platter and garnish with anchovies, lemon zest, pepper and a drizzle of oil.
Serve with bread on the side.
