Cheese maker notes
Grana-style cheese is made from cow milk. The milk is heated in copper vats, where non-animal rennet is added to form curds. The curd is then cut into tiny granules using a traditional spino and cooked fore being left to settle. After draining, the cheese is molded into wheels, pressed, and immersed in a salt brine for about 16–25 days to develop its flavor. Aging occurs in controlled environments for a minimum of 9 months, developing a grainy texture and nutty, savory taste. Each wheel undergoes rigorous inspections before release.
