Ingredients:


    Instructions:

    Combine flour, baking powder, and salt in a large bowl and mix well.
    Add olive oil and mix until evenly crumbly.
    Make a well in the middle of the flour mixture and add warm water and milk. Mix with your hands until a dough is formed and is soft but not sticky. Knead for a few minutes or until smooth and elastic.
    Transfer to a clean lightly floured surface. Divide into 6 equal portions, cover with a damp tea towel, and let rest for 30 mins.
    Heat a large fry pan to medium-high in time for the dough to finish resting.
    Roll each portion into a round disc, about 3mm thick.
    Gently place the dough into the hot pan and cook for 2 minutes on each side or until golden.
    Carefully remove the piadina from the pan and place on a paper towel. Proceed with remaining dough.

     

      Squacquerone, Prosciutto & Rocket Piadine

      Ingredients (for 2 piadine):

       

      Instructions:
      Spread squacquerone cheese over each piadine. Top with prosciutto and rocket. Fold into a half moon. Serve fresh or cook in a sandwich press for 2 minutes until the fillings are just warm.

        Stracciatella, Cherry Tomatoes & Grilled Zucchini Piadine

        (Vegetarian)

        Ingredients (for 2 piadine):

         

        Instructions:
        Slice zucchini lengthwise, brush with olive oil and grill on a griddle pan for 3 minutes on each side.
        Spread Stracciatella cheese over each piadine. Top with grilled zucchini and cherry tomatoes. Season to taste and fold into a half moon.
        Cook in a sandwich press (or pan fry on both side) for 2-4 mins or until fillings are warm.

          Smoked Scamorza, Ham &  Black Olive Tapanade Piadine

          Ingredients (for 2 piadine):

           

          Instructions:
          Spread olive tapenade over each piadine. Top with scamorza and ham. Fold into a half moon.
          Cook in a sandwich press (or pan fry on both side) for 2-4 mins or until mozzarella is melted.
